What version of frp are you using (./frpc -v or ./frps -v)?
0.16.0

Is there a way to update the server and clients without loosing connection? We want to update but we don't have physical access to the devices so we don't want to loose connection.

frp is not production use ready. It can't promise backward compatible. So you'd better upgrade it by yourself.
